Super Bowl 2014 is coming up on Feb. 2—kickoff is at 6:25 p.m. (ET)—and you know what that means … an entire afternoon dedicated to watching football and rooting for your favorite team.

And, of course, that means glorious Super Bowl parties with tons of football-themed (and non football-themed) snacks. 

Whether they’re appetizers, main dishes or desserts, here are some Super Bowl party recipes that are sure to be winners among all your guests. 

BONELESS BUFFALO WINGS

Yield: Serves 8

These tender pieces of spicy chicken tenders will give your party guests lots to chew on.

Ingredients:

3 T nonfat buttermilk

3 T hot pepper sauce

3 T distilled white vinegar, divided

2 lbs. chicken tenders

6 T whole wheat flour

6 T cornmeal

½ tsp. cayenne pepper

2 T canola oil, divided

2 C peeled carrot sticks

2 C celery sticks

Ranch dressing/Blue Cheese dressing for dipping

Directions:

Whisk buttermilk, 2 T hot pepper sauce and 2 T vinegar in a large bowl until combined. Add chicken; toss to coat. Transfer to the refrigerator and let marinate for at least 10 minutes or up to 1 hour, stirring occasionally.

Meanwhile, whisk flour and cornmeal in a shallow dish. Whisk the remaining 1 T hot sauce and 1 T vinegar in a small bowl.

Remove the chicken from the marinade and roll in the flour mixture until evenly coated. (Discard remaining marinade and flour mixture.) Sprinkle both sides of the chicken with cayenne.

Heat 1 T oil in a large nonstick skillet over medium-high heat. Add half the chicken, placing each in a little oil. Cook until golden brown and cooked through, 3-4 minutes per side. Transfer to a serving platter. Repeat with the remaining 1 T oil and chicken, reducing the heat if necessary. Transfer to the platter. Drizzle the chicken with the reserved hot sauce mixture. Serve with carrots, celery and dressing of your choice.

NACHO CASSEROLE

Yield: 6 main dish servings

You thought nachos were addicting alone … wait until your guests get to try them in casserole form. 

Ingredients:

1 can Cheddar cheese soup

½ C low-fat milk

1 jar mild or medium-hot salsa

1 bag baked, unsalted tortilla chips

1 can fat-free refried beans

2 jalapeno chiles, thinly sliced (if you don’t want any heat, omit jalapenos)

1 C shredded Cheddar cheese

Directions:

Preheat oven to 400 degrees F. In 13 x 9 inch ceramic or glass baking dish, stir undiluted soup with milk; spread evenly. Top with half of salsa and half of chips. Carefully spread beans over chips. Top with remaining chips and salsa. Sprinkle with chiles and Cheddar.

Bake 20 minutes or until hot. Serve and enjoy!

SALSA ROJO

Yield: Serves 6

Pair this salsa with your favorite brand of chips and you’ll have an instant hit.

Ingredients:

1 T extra virgin olive oil

1 C diced onion

2 medium chile peppers, diced

2 cloves garlic, minced

1 ½ lbs. tomatoes, diced

1 T chili powder

1 tsp. ground cumin

1 tsp. salt

¼ tsp. cayenne pepper, to taste

¼ C chopped fresh cilantro

2 T lime juice

Directions:

Heat oil in a large saucepan over medium-high heat. Add onion, chile peppers and garlic and cook, stirring, until the onion is soft and beginning to brown, 3-4 minutes.

Reduce heat to medium. Add tomatoes, chili powder, cumin, salt, and cayenne. Cook, stirring occasionally, until the tomatoes have broken down and thickened slightly, 6 to 8 minutes.

Carefully transfer the tomato mixture to a food processor or blender. Pulse to make a chunky sauce, or until desired consistency. (Use caution when pureeing hot ingredients.)

Let cool to room temperature, about 1½ hours. Stir in cilantro and lime juice just before serving.

RITZ PASTRAMI AND CORNED BEEF MINI SANDWICH

These delicious DELI-casies are filled with pastrami, corned beef and homemade Russian dressing in between two signature RITZ crackers. Fun and easy to prepare, these one-bite wonders will have your guests chowing down in no time. 

Ingredients:

10 slices deli-sliced corned beef

10 slices deli-sliced pastrami 

20 RITZ crackers

2 tsp. ketchup

2 tsp. pickle relish

1 ½ tsp. fresh lemon juice

½ tsp. Worcestershire sauce

1/8 tsp. coarse salt

Dash freshly ground pepper

Directions:

To make Russian dressing, blend together the mayonnaise, ketchup, relish, lemon juice, Worcestershire sauce, salt, and pepper. Stir until smooth.

Place 10 RITZ Crackers on tray. Put about ¼ tsp. Russian dressing onto each cracker.

Cut corned beef and pastrami deli slices in half vertically.

Put two pieces each of corned beef and pastrami on each cracker.

Top with additional ¼ tsp. Russian dressing and remaining crackers to form sandwich.

GAME DAY STUFFED HAMBURGERS 

Yield: Serves 6

These hearty hamburgers will definitely leave your guests feeling stuffed. 

Ingredients:

1 large potato, peeled and shredded

1 C shredded Swiss cheese

1 C chopped fresh mushrooms

2 lbs. lean ground beef

2 packages dry onion soup mix

Directions:

Preheat grill for high heat. In a medium bowl, mix together potato, cheese, and mushrooms.

In a large bowl, mix ground beef with onion soup mix. Form into 6 large burger patties. Make a pocket in each burger, stuff with potato mixture, and seal.

When ready to grill, brush grate with oil. Cook burgers over high heat for 5 minutes on each side, or until well done. Serve hot.

SIMPLE TURKEY CHILI

Yield: Serves 8

This simple and hearty chili is perfect when topped with Cheddar cheese, your favorite crackers and sour cream. 

Ingredients:

1 ½ tsp. olive oil

1 lb. ground turkey

1 onion, chopped

2 C water

1 can canned crushed tomatoes

1 T garlic, minced

2 T chili powder

½ tsp. paprika

½ tsp. dried oregano

½ tsp. ground cayenne pepper

½ tsp. groung cumin

½ tsp. salt

½ tsp. ground black pepper

Directions:

Heat the oil in a large pot over medium heat. Place turkey in the pot, and cook until evenly brown. Stir in onion, and cook until tender.

Pour water into the pot. Mix in tomatoes, kidney beans, and garlic. Season chili powder, paprika, oregano, cayenne pepper, cumin, salt and pepper. Bring to a boil. Reduce heat to low, cover and simmer 30 minutes.

TOUCHDOWN PIZZA

Yield: One 14-inch pizza

Why order out when you can make your own pizza? This chicken-topped homemade meal should be a Super Bowl party staple.

Ingredients:

1 package prebaked pizza crust

1 C diced cooked chicken

3 T Buffalo wing sauce

½ C Buffalo wing sauce

1 package crumbled blue cheese

1 stalk celery, thinly sliced

1 C shredded mozzarella cheese

Directions:

Preheat oven to 475 degrees F (245 degrees C). Line a baking sheet with aluminum foil.

Place pizza crust on the prepared baking sheet. Mix chicken and 3 tablespoons wing sauce together in a bowl until evenly coated.

Spread ½ C wing sauce on the pizza crust; top with blue cheese, chicken mixture, and celery. Cover pizza with mozzarella cheese. Bake in the preheated oven until pizza is cooked through and cheese is bubbling, about 12 minutes. Cool pizza about 5 minutes before cutting into squares.

PEANUT BUTTER FOOTBALL COOKIE

Yield: 12-15 servings

This peanut butter-laden sweet will have your entire party rooting for more.

Ingredients:

Cookie

Nonstick cooking spray

½ C old-fashioned oats

1 ¼ C all-purpose flour

½ tsp. baking soda

½ tsp. fine salt

1 stick unsalted butter, softened

1 C plus 2 tsp. granulated sugar

1 large egg

1 C smooth peanut butter

2 tsp. pure vanilla extract

Frosting

1 stick unsalted butter

1 C confectioners’ sugar

1 T milk

1 tsp. pure vanilla extract

Pinch fine salt

Directions:

Preheat the oven to 350 degrees F. Line a rimmed baking sheet with parchment paper and spray with nonstick cooking spray.

Pulse the oats in a food processor or mini chopper until finely ground. Whisk the ground oats, flour, baking soda and salt in a medium bowl.

Mix the butter and 1 C of the granulated sugar on medium-high speed until light and fluffy, using either a hand mixer with a large bowl or a stand mixer with the paddle attachment, about 4 minutes. Add the egg and beat until well incorporated. Beat in the peanut butter and vanilla until smooth and creamy, about 2 minutes. With the mixer on low, gradually add the flour mixture until the dough is well combined.

Scrape the dough onto the prepared baking sheet. Using your hands, flatten and form the dough into a football shape, about ½ inch thick. Sprinkle the remaining 2 tsp. sugar over the surface. Bake until the cookie is light golden brown and set, 20-25 minutes. Allow to cool completely, about 15 minutes.

Frosting

Beat the butter until creamy on medium speed in a medium bowl. Add the confectioners' sugar, milk, vanilla and salt. Beat until thick and creamy. Spoon the frosting into a quart-size zippered bag. Snip a small piece from the corner and pipe to create football laces or any other desired decorations.

SUPER BOWL BARS

Yield: 36 servings

These delicious bars are chockfull of sweet goodies that are sure to please your guests … even if the football scores don’t.

Ingredients:

1 ½ C graham cracker crumbs

¼ C cocoa

¼ C sugar

¼ C margarine or butter, melted

1 can sweetened condensed milk (not evaporated)

12 oz. semi-sweet chocolate chips

1 C Reese’s Peanut Butter Cups or 1 C butterscotch chips

3 ½ oz. coconut flakes

1 C chopped nuts

Directions:

Preheat oven to 350 degrees F (325 degrees F for glass dish). Combine crumbs, cocoa, sugar and margarine. Press firmly on bottom of 13 x 9 inch baking pan; pour condensed milk evenly over crust.

Top evenly with remaining ingredients in order listed; press down firmly.

Bake 25-30 minutes or until lightly browned. Cool; chill thoroughly if desired. Cut into bars and store loosely covered at room temperature. 

FABULOUS FOOTBALL COOKIES

Yield: 2-3 dozen

These adorable and delicious cookies will be too good for your Super Bowl party guests to pass up.

Ingredients:

1 C dark brown sugar, packed

1 C butter or 1 C margarine, softened to room temperature

1 large egg

½ tsp. ground cinnamon

2 ½ C flour

1/3 C baking cocoa

½ tsp. baking soda

1 C hazelnuts, toasted and ground

1 C white chocolate chips

2 tsp. shortening

Directions:

In large mixing bowl, beat brown sugar and butter until creamy, about 2 minutes. Add egg and cinnamon; beat until light and fluffy. Add flour, cocoa and baking soda, beating on low speed to combine. Mix in ground nuts; dough will be somewhat stiff.

Shape dough into 2 flat rounds; cover with plastic wrap and chill for at least 1 hour. On surface dusted lightly with flour, roll out 1 round at a time to 1/8-inch thickness. The dough may be a bit stiff at first and crack a bit, but it will be okay … just keep at it.

With cookie cutter, cut out football shapes. Place 1 inch apart on cookie sheets coated with cooking spray or parchment paper.

Using a knife, mark laces on ½ of the footballs. These will be the “tops” of the footballs.

Bake at 350 degrees F for 10-12 minutes or until the tops are no longer moist. Remove from cookie sheet and place on wire racks to cool.

Place white chocolate chips and shortening in a microwave safe dish; microwave on 50 percent power for 3-4 minutes, stirring every 30-45 seconds until the chips are melted.

Fill pastry bag fitted with a tip to achieve a thin line with white chocolate mixture. Pipe melted white chocolate onto the back of an unmarked cookie; top with a cookie with laces marked on it to make a sandwich. Decorate the top by piping on additional melted white chocolate to resemble laces on a football.

Repeat with remaining cookies. Tip: Double the white chocolate mixture so you can be more generous with the filling. 

TOUCHDOWN TRUFFLES

Yield: 24

These sweet, chocolate truffles are sure to be a sweet finish to any Super Bowl gathering.

Ingredients:

1 package Oreo cookies

1 package cream cheese

2 oz. vanilla icing

Directions:

Crush Oreos in plastic bag. Add cream cheese and either knead it in the bag or mix it in a bowl.

Chill the Oreo mixture in the fridge for 5 minutes to make it easier to handle. Roll hunks of mixture into balls that are about 1 ½ inches wide in your hands, then shape to make them look like footballs. 

Pipe football “laces” on the top of each truffle. Chill truffles before serving. 

NUTELLA BROWNIES

Whether their teams won or lost, every individual at your party can celebrate (or drown their sorrows) with these scrumptious brownies filled with cocoa, Nutella and milk chocolate.

Ingredients:

1 C butter

2 ¼ C sugar

½ C Nutella

4 large eggs

1 ¼ C cocoa powder

1 tsp. salt

1 tsp. baking powder

1 tsp. espresso powder

1 T vanilla extract

1 ½ C all-purpose flour

10 oz. package Hershey’s Milk Chocolate Chips

Directions:

Pre-heat the oven to 350 degrees F. Butter a 9 x 13 inch baking dish.

In small saucepan over low heat, melt butter completely. Stir in sugar and continue cooking for 1-2 minutes, stirring constantly. Do not allow sugar mixture to boil.

Remove from the heat and stir in the Nutella until well combined.
Pour butter mixture into a large bowl; beat in cocoa powder, eggs, salt, baking powder, espresso powder and vanilla extract. Mix until well combined.

Stir in the flour and baking melts until just combined.

Spread into prepared pan (batter will be very thick and sticky) and bake for about 30-35 minutes, until a tester comes out mostly clean. The edges should be set and the center should still look slightly moist, but not uncooked. Cool on a wire rack.
