FitGirl: Easy And Healthy Fall Snacks

Thanks to Pinterest, food blogs and creative recipes are becoming more popular and gaining fans. Instead of munching on chocolate and candy this Wednesday, try a healthy (but still delicious) alternative snack.

Pumpkin Frozen Yogurt
Ingredients:
1-cup nonfat vanilla yogurt, strained
1 cup pumpkin puree
1 tablespoons granulated sugar
1-teaspoon pumpkin pie spice

Instructions: Mix all the ingredients together in a large mixing bowl and then place the bowl in the freezer and stir every 30 minutes until the consistency resembles frozen yogurt.

Blueberry Cheesecake Popsicle Bites
Ingredients:
2 cups fresh blueberries
8 Tbsp (1/2 cup) cream cheese, light
6 Tbsp icing sugar
30 Tbsp (2 cups) Cool Whip 95% Fat Free Whipped Topping

Instructions: Mix the blueberries, cream cheese and icing sugar in a blender and then stir in the Whipped Topping. Spoon the mixture into ice cube trays and put in the freezer until hardened.

Oven Dried Strawberries
Ingredients:
Strawberries
Pinch of Salt and Pepper

Instructions: Wash the strawberries and cut them into halves. Then place them on a baking sheet and add dashes of salt and pepper. Preheat the oven to 210 degrees and bake for three hours. They taste like candy!

Baked Apple

Ingredients:

1 small baking apple 
2 tsp dried fruit (raisins, chopped apricots, cranberries,etc.)

1 tsp chopped walnuts

1 tsp brown sugar

1/8 tsp cinnamon

1/2 tsp unsalted butter or canola oil

Instructions: Wash an apple and cut out the core (don’t cut all the way through the bottom). Put the desired contents into the cored apple hole, such as fruit and cinnamon and then add the butter or canola oil on top. Preheat the oven to 350 degrees and bake for 20 to 30 minutes

Toasted Pumpkin Seeds
Ingredients:
Pumpkin Seeds
Salt
Olive Oil

Instructions: Add one cup of pumpkin seeds, four cups of water and two tablespoons of salt to a saucepan and let it simmer for 10 minutes, then drain. Preheat the oven to 400 degrees, coat a baking sheet with olive oil and bake the seeds for 5-10 minutes or until they are lightly toasted.

Frozen Banana and Strawberry Pops
Ingredients:
Bananas
Strawberries
Low-fat plain yogurt
Toppings: granola, small dark chocolate chunks

Instructions: Wash or peel the fruit and gently insert Popsicle sticks. Then dip the bananas and strawberries in low-fat yogurt, place on wax paper and sprinkle on granola and any other desired toppings. To get creative, add nuts or chocolate chips to make a ghost face.
